One of the biggest challenges of a clean eating lifestyle is finding delicious condiments that are also healthy and diet-friendly. I’ve started making dressings either from dry mixes or from separate ingredients so that I can control everything inside the bottle.
Honey mustard has been a long time favorite of mine, but I could never get past turning over the bottle and reading a hundred ingredients, including one of my least favorite, soybean oil! So I sought out some recipes and came up with my own blend of what I consider to be a perfect dressing. The texture from the stone ground mustard is amazing. This dressing is runny, so it would not work well as a dip. But it’s a perfect way to add flavor and moisture to plain, dry chicken breasts. My favorite way to eat it is to add shredded chicken to a bed of baby spinach or chopped asparagus, and dress it with this delectable honey mustard.
Recipe: Homemade Honey Mustard Dressing
Combine equal parts (I use 1/2c of everything):
Stone Ground Mustard
Apple Cider Vinegar
Next, whisk in extra virgin olive oil. Store in the fridge in an airtight container. I use a quart sized canning jar with plastic lid.
